Scorzonera should not be confused with salsify, which has yellow skin and has practically desappeared from our shelves. Scorzonera is less fibrous and is tastier with a gentle, sweet flavour.
We plant our sweet potatoes in May under the west-southern French sun, in a sandy soil that is well-drained and nice and warm. This ensures optimal root development.
This « forgotten » vegetable is experiencing a spectacular come-bak. It can be enjoyed both raw and cooked. Parsnips keep well in the soil and we can harvest from September to March.
