Sweeter and sweeter than salsifi

Our annual production of 5000 to 6000 tons is intended for canneries.

The scorzonera with black skin should not be confused with salsify, which has yellow skin and has practically disappeared from the stalls. The scorsoneraz is less fibrous and more flavorful, sweet and sweet.

Sown in March and April to be harvested from January to March the following year, the scorsonera is an ancient vegetable.
